What is HFCS?

Also commonly referred to as HFCS for short, high fructose corn syrup is an enzymatically modified, crystal-clear corn syrup (hence the name). It has the same sweetness, and roughly the same calories, of a traditional sugar solution.


The key difference is that HFCS is not a sucrose product - this despite the fact that it offers the same "clean" sweetening and the versatility to be used in everything from beverages to dairy products to ketchup and beyond.

Types of HFCS

At Indiana Sugars, we provide bulk high-fructose corn syrup in two primary types.


HFCS 42

HFCS 42 contains 42% fructose. HFCS 42 is a bit sweeter than traditional sugar, due to the percentage of fructose – an extremely sweet substance.


HFCS 55

As the name implies, HFCS 55 contains 55% fructose. High-fructose corn syrup 55 is nearly 25% sweeter than traditional sugar and is commonly added to soft drinks. Often, less is required due to its enhanced sweetness. Finally, HFCS 55 is the most popular form of high-fructose corn syrup.

Why is HFCS Popular?

First presented to the food and beverage industry in the late 1970s, nearly every full-calorie soft drink currently produced in the U.S. is sweetened with HFCS. Since inception, high-fructose corn syrup has been extremely popular among consumers and food formulators.


Usually sold at a price considerably lower than sugar, HFCS is a cost-effective sweetener. However, high-fructose corn syrup possesses a sweetness comparable to (or greater than) traditional sucrose. In many functions, HFCS performs with enhanced stability and functionality than sugar, easy to incorporate into food and beverages. HFCS extends a product’s shelf life and provides attractive color in certain baked goods.

How is HFCS Produced?

The chief ingredient in high fructose corn syrup is processed corn starch. Through processing, that starch - which is already a chain of linked sugars - is then further broken down into glucose.


At that point, enzymes get added to the substance in a way that converts a specific amount of it into fructose. The end result is the sweet high fructose corn syrup substance we all know and love.
